Let's face it, even if you have a high quality stainless steel charcoal grill, you have to do regular routine cleaning and up keep on it. Even if you have just purchased a new one, by the time the season is over, it will need some cleaning. There are some must have bbq grill accessories for cleaning a grill, be it stainless steel or any other gas bbq grills. One of them is a good brush with hard bristles. Forget about those scrubber pads, they just won't work on baked on food, and you will spend more time trying to get the gunk of the grill than enjoying your cooking time.
Part of the problem most people have with cleaning and maintaining their stainless steel grills is that they don't clean it after every use. This can not only make it hard to clean later, but any food stuck on the grilling surface that is not cleaned after presents a big health risk later. First let's start with what you should do every time you grill. Before you add your charcoal and start it up, inspect the grill for any leftover caked on food. If you have done routine cleaning, this shouldn't be a problem. You will want to take a damp towel, and wipe the grill down, on both sides.
When your grilling is done, take a moment to use your brush. Scrub the grilling surface, along the rail, not across, while the charcoal is still hot. This makes it far easier to clean over all, before the excess food gets baked in. Use your tongs to flip the grill over and do the bottom part as well, then return it to its original position. Inspect the area, and if needed do the process again. Then you can close the lid, and allow the remaining charcoal to sterilize the surfaces.
Make sure that the charcoal in your stainless steel charcoal grill has completely cooled before dumping, unless there is some kind of receptacle available that can take hot ash. You will want to take what you can to an area of your yard that isn't going to be damaged by the charcoal residue, and spray the whole thing down with your garden hose, to clean it thoroughly. Some parts, like the grill itself, the racks and even holder on some grills can even be washed in the kitchen sink or dishwasher. To be sure that your grill is ready for the next year, at the end of the season you should take it into one of those self service power washer places, and spray it down, cleaning all the surfaces exposed to charcoal.

If you are tired of all the smell and mess of lighter fluid, try the Weber Performer Charcoal Grill, with gas assist starter. This model is in the $300 range.
